Don't know what level of hotel you're looking for - I stayed at the Green Tortoise hostel, which was very central and pretty cheap. Also clean, safe, etc. But it's definitely a backpacker's hostel.
The only real thing that stood out was the Elliot Bay Book Company (a fabulous bookshop - somehow it sucked away an entire day when my friends and I visited) & pike place market.
